Pudding Surprise

Ingredients
Ritz wheat crackers (60)
One stick margarine
1 1/2 cups of Lehigh Valley Dairy Farms 1% or Fat Free milk
2 Packages Instant Pudding
Vanilla Ice Cream
Whip Topping
Optional - You can top with anything to go with pudding flavor (ie. shredded coconut w/coconut pudding.
Directions
The Crust
60 Ritz wheat crackers (crushed)
1 stick margarine
Melt butter and mix in crushed ritz crackers, spread on bottom of cake pan.
The Filling
One 1/2 gallon of vanilla ice cream (reduced fat or sugar free) - let ice cream stand to soften before use.
1 1/2 cups Lehigh Valley Dairy Farms 1% or Fat Free Milk
2 packages (any flavor) sugar free pudding
Mix all three ingredients together and pour onto ritz crust . Put in refrigerator to stiffen for approximately 24 hours.
Top with whip cream prior to serving.
