Peter Punkin’ Eater Pudding

Ingredients

4 large egg yolks

¾ cup molasses

scant ¼ c. cornstarch

2 ½ cups Lehigh®- rBST-free Whole Milk, divided

3/4 cup pumpkin puree

½ teaspoon cinnamon

½ teaspoon ginger (diminish or omit, per request or your tot)

½ teaspoon nutmeg (if your child permits)

2 T cold butter

2 T vanilla


Directions

1. In medium mixing bowl, whisk together yolks, brown sugar, cornstarch, ½ cup of the milk, the pumpkin, and the spices until well mixed and smooth.

2. Put remaining milk in medium saucepan and bring to just under boil.

3. Remove from heat and whisk about ½ the hot milk into the egg mixture.

4.  Whisk entire warm egg mixture into the saucepan with the hot milk and return to medium heat.

5. Stirring constantly, bring mixture to boil and cook for 2 min. Remove from heat and stir in butter and vanilla.

6. Pour into serving dishes and serve warm or chilled.
